MARSHA COSENTINO, M.A.

From excavating the ruins of ancient hearths to working in the Scottsdale, Arizona resort industry, her knowledge of food and culture is from the ground up. Field archaeologist, historian, geographer and business executive, she was also a recipient of a DOE Sustainable Agriculture Grant. She continues her vital interest in the preservation and rescue of heirloom plants—Spelt is one—and rare breeds of domestic livestock. As a scientist, she has observed first hand the effects of nutrition on culture.

Cooking is not just science. It is alchemy and art, experimentation and whimsy. Ms. Cosentino’s passion for cooking began 45 years ago when she was nose-high to a countertop. Her pen and ink illustrations and the recipes are ways of giving new life to the art of Old World and New World cooking traditions.

With Spelt Healthy! Quality Whole Food Cooking and Baking with Spelt she joins those on the leading edge of the Whole Food nutrition and culinary renaissance. This is the first of four volumes by her in the Autumn Rose Press Spelt Healthy! series. What’s coming? Many Small Things: The Appetizing World of Spelt; Knead to Know: Around the World of Spelt Baking; Spelt Healthy! International.
